A delicious way to serve fennel. Bake in mini muffin tins, individual silicone moulds or small ramekins.

- 2 bulbs fennel, sliced
- 1 onion, chopped
- 1 tablespoon mustard
- 3 eggs, beaten
- 250ml cream
- salt and freshly ground blank pepper to taste

- Boil the fennel in salted water for 5 minutes; drain.
- Combine the fennel, onion, mustard, eggs, cream and seasoning. Stir well to combine. Bake at 200 C / Gas 6 for 30 minutes.
